Mufu: Beat the second dungeon in Quest Mode.
Emperor Udan: Beat the third dungeon in Quest Mode.

Choose alternate dress for your character:
Whenever you select a character, hold up on the D-pad and then select 
your character.

You dont play as UDAN if you beat the dungeon. You play as toriyoma robo.
